Harvest:
Grapes were hand picked in the early morning hours of September 16, 2006 to maintain cool temperatures.
Brix 24.5̊; Acid 0.7 grams/100ml; Alcohol 13.5%
Fermentation:
100% small bin fermented.
Fermentation bins were manually punched down
every four hours for 6 days to achieve optimal color extraction and
intense fruit flavors.
Aging:
21 months in 59 gallon French and American oak barrels.
Tasting Notes:
This unique blend of Cabernet Sauvignon, Merlot, and Cabernet Franc was produced using the finest fruit of our 2006 harvest.
This wine possesses a deep garnet color with aromas and flavors of cassis and black fruit.
In the tradition of a French
Bordeaux the varietals
were blended to create a smooth and balanced wine that is drinkable now
but will benefit from additional bottle aging.

Fruit: 100% Chardonnay from the Santa Lucia Highlands, Sleepy Hollow Vineyards, Monterey County, CA
Fermentation: 100% barrel fermented in French and American oak
Aging: 12 to 14 months in French and American oak
Tasting Notes: The wine has a Creamy, buttery taste
resulting from the perfect combination of lush ripe fruit and oak aging.
Cool nights and warm days allowed the fruit to build a natural balance
of acid to sugar. This wine is full bodied with a crisp, clean finish.
